ABSTRACT

To summarize thepractice and experience of targeted food hygiene security measures in a major field activity of the army in order to provide references for diverse tasks. Considering the characteristics of heavy activity, field operations and the influence of COVID-19, a series of support measures related to food hygiene surveillance were strengthened. The first measure was review of recipes, health management and training of employees, procurement and storage of raw materials, warehouse management, processing and manufacturing management, disinfection of tableware, as well as food sample retention. Secondly, the control points that probably cause spread of COVID-19 in the phase of food service industry were analyzed, then relevant supervision and guidance were carried out from the aspects of employees and diners, foods of cold chain logistics, environment and emergency response plan. Finally, in order to assure the safety of food processing and crowd-gathered diet in the field, the following measures were guided to adopted including selecting the site of cooking and dining properly, cleaning the environment, making dishes using pure water and semi-manufactured foodstuff, keeping food sanitation in the course of transport and dinning, as well as supervising the robot machines for cooking automatically. The main experiences were listed as follows: promoting food safety awareness of the principal and the employees of the canteen, enhancing legal enforcement capacity and technical capacity of health supervisors, focusing on new risks related to food safety as well as reinforcing the management of health supervisors and employees in the field.

ABSTRACT

Amid the COVID-19 pandemic, mask-wearing has become a common practice in the foodservice industry to prevent the spread of respiratory diseases. Like kitchen utensils, a mask may serve as a vehicle for cross-contamination of pathogens during food handling. The objective of this study was to quantify cross-contamination between tasks of handling contaminated chicken and chopping lettuce. Chicken breasts were inoculated with a high or a low level of nonpathogenic Escherichia coli surrogates (ca. 6 or 4 log CFU/ml) and sliced for 1, 5, or 10 min. During slicing, duplicate, single-use medical masks were touched each minute. One mask was immediately sampled, but the second mask was used to contaminate lettuce by touching the mask each minute while chopping the lettuce for 5 min. E. coli were enumerated from the second mask and lettuce. Masks touched while slicing both high- and low-inoculated chicken showed significant contamination (0.8-4.9 log CFU/cm2) after each slicing scenario of 1, 5, or 10 min (P > 0.05). Lettuce was significantly contaminated regardless of inoculation level (1.0-3.2 log CFU/g). Slicing time was a significant factor in some cases (P < 0.05), whereas inoculation level was not (P > 0.05). Data indicate masks can be a source of cross-contamination if not replaced appropriately.

ABSTRACT

Responding to mistrust in the European agencies' risk assessments in politically salient cases, the European Union (EU) legislator, the European Food Safety Authority and the European Medicines Agency alike have accelerated their efforts to foster EU regulatory science transparency. These simultaneous endeavours have, however, taken place in a fragmented legislative and administrative context, with each agency operating under a different legal framework. By focusing on authorisation procedures, from registration of studies to authorisation of novel foods, pesticides and human medicines, this article examines the resulting regimes governing the disclosure of scientific data by EU agencies to identify common trends and sectoral specificities. Against the background of an overall shift towards enhanced transparency, we shed light on, first, the circulation of institutional arrangements and practices among agencies and, second, the new dimensions of transparency emerging from these developments. We also highlight the remaining sectoral differences and argue that they could have potentially large impacts on the amount and type of information disclosed and on the level of transparency perceived by stakeholders and citizens. We argue that more coherence across the sectoral transparency regimes is needed, in particular in light of the agencies' contested legitimacy and of their increasing cooperation on cross-cutting issues like antimicrobial resistance and medicine and pesticide residues in food.

ABSTRACT

Procurement of game animals is a major source of revenue for hunting clubs in Poland. For several years, the game meat buying market has been showing an upward trend, but this situation is also influenced by random factors that negatively affect the value of the game meat buying market. For several years in our country we have been struggling with the ASF virus, and since 2020, negative effects in the economy related to the occurrence of the SARS-CoV virus have been observed, also affecting the hunting sector with its activities. The aim of the study was to analyze the dynamics of game meat procurement in Poland in the years 2009-2021. The data concerned the three most important species, namely deer, roe deer and wild boar. The analysis covered the quantity of game meat, procurement value and the average price of game meat depending on animal species. The conducted research confirmed an upward trend in the volume and value of game meat procurement for all the analysed game species. Similarly, the average procurement prices of roe dee and wild boar meat with the exception of red deer, showed an upward trend. The study confirmed the negative impact of the ASF virus and the SARS-CoV-2 virus on the game meat buying market in Poland.

ABSTRACT

BACKGROUND: Antimicrobial resistance (AMR) has emerged as a major global public health challenge due to the overuse and misuse of antibiotics for humans and animals. Hospitals are among the major users of antibiotics, thereby having a large contribution to AMR. OBJECTIVE: The aim of this study is to determine the prevalence of antibiotic-resistant pathogenic bacteria and the level of antibiotic residues in the hospital effluents in Selangor, Malaysia. METHODS: A cross-sectional study will be performed in the state of Selangor, Malaysia. Tertiary hospitals will be identified based on the inclusion and exclusion criteria. The methods are divided into three phases: sample collection, microbiological analysis, and chemical analysis. Microbiological analyses will include the isolation of bacteria from hospital effluents by culturing on selective media. Antibiotic sensitivity testing will be performed on the isolated bacteria against ceftriaxone, ciprofloxacin, meropenem, vancomycin, colistin, and piperacillin/tazobactam. The identification of bacteria will be confirmed using 16S RNA polymerase chain reaction (PCR) and multiplex PCR will be performed to detect resistance genes (ermB, mecA, blaNDM-L, blaCTX-M, blaOXA-48, blaSHV, VanA, VanB, VanC1, mcr-1, mcr-2, mcr-3, Intl1, Intl2, and qnrA). Finally, the level of antibiotic residues will be measured using ultrahigh-performance liquid chromatography. RESULTS: The expected outcomes will be the prevalence of antibiotic-resistant Enterococcus faecium, Staphylococcus aureus, Klebsiella pneumoniae, Acinetobacter baumannii, Pseudomonas aeruginosa, and Enterobacter (ESKAPE) bacterial species from the hospital effluents, the occurrence of antibiotic resistance genes (ARGs) from the isolated ESKAPE bacteria, and the level of antibiotic residues that may be detected from the effluent. Sampling has been conducted in three hospitals. Data analysis from one hospital showed that as of July 2022, 80% (8/10) of E. faecium isolates were resistant to vancomycin and 10% (1/10) were resistant to ciprofloxacin. Further analysis will be conducted to determine if the isolates harbor any ARGs and effluent samples are being analyzed to detect antibiotic residues. Sampling activities will be resumed after being suspended due to the COVID-19 pandemic and are scheduled to end by December 2022. CONCLUSIONS: This study will provide the first baseline information to elucidate the current status of AMR of highly pathogenic bacteria present in hospital effluents in Malaysia. ABSTRACT

Waste generated in university laboratories is an important component of university waste management, especially regarding their hazardousness and, also, the cost involved in their forwarding. To make a good management of this waste, it is essential to know the amount generated and the composition. However, this type of information remains scarce. In this work, waste from the laboratories of the University of evora (Portugal) was surveyed from 2007 to 2021, using existing records. In the 15 years under analysis, the laboratories of the University of evora generated about 61 tonnes of waste, 88% of which were hazardous and 66% were in the liquid state. In addition, only 3% of this waste was subjected to recovery operations. Moreover, the COVID-19 pandemic contributed to a double increase in hospital waste generated and to a substantially decreased of hazardous liquid waste from the laboratory activity, especially in the first year of the pandemic. In 2021, the second year of the pandemic, there was a "return to normality", reaching the highest value of waste generated in the laboratories, of 8.6 tonnes. Finally, possible solutions for improving laboratory waste management were also discussed.

ABSTRACT

In COVID-19 pandemic in the world, alcohol (ethanol) can be listed as a sterilizing disinfectant. It absolutely played a Messianic function on the sterilization effect. And it is said that it has one more function called "salinity reduction" but that function is not widely known. The two functions (Sterilization & Salinity Reduction) mentioned above are extremely important regarding the theme of "raw seawater into beverage" in this study. It is thought that if the two functions are achieved other water quality items such as NO-2 and other items can be cleared with comparative ease. To put briefly the feature of modern waterworks in a word, it can be said that "source of water is river water and its sterilization is chlorine". In this study, we set up it with a completely new sanitization method (great reset), that is, "source of water is mixtures (seawater and rainwater) and its sterilization is ethanol". And it can be also expected that the capture and storage of ethanol as a renewable resource is basically possible by utilizing sunlight as a natural power. Therefore, we think that this resolves itself into a question of the choice (sense of value/culture) of the users. It means that how users finally balance out with three factors, i.e., cost, risk (safety) and benefit. Based on the viewpoint mentioned above, we examined the possibility of raw seawater into beverage using ethanol as a renewable resource to create humankind's wisdom to the settlement (breakthrough) of the water scarcity in the world including Asia and Africa. As a result, we have obtained the new findings that suggest the possibility of raw seawater into beverage using ethanol as a renewable resource.

ABSTRACT

Cold storage is expensive for smallholder farmers and seed processors in developing countries. Smallholder farmers continue to resort to traditional storage methods such as polypropylene (PP) bags for maize grain storage. They often dose the grains with chemicals to preserve them. However, hermetic bags have proven to provide superior protection to grains during storage without chemical treatment. With the advent of the COVID-19 virus which distorted many food systems across continents, stakeholders in the grain industry need to adopt better systems to reduce post-harvest food loss and improve food security. In this study, maize grain quality, nutritional content and viability were compared under three storage methods (PP bags with Phostoxin treatment, cold storage, and hermetic bag) over a storage period of four months. The results showed that the hermetic bag maintained the moisture content (MC) of the stored grains with 0.40% variations from the initial MC of 13% at the end of the storage period compared to 0.70% and 1.10% for grains stored under cold storage and in PP bags, respectively. Grain damage after the 4th month of storage in the hermetic bag had only increased by 0.40% from an initial 13.3% before storage compared to an increase of 6% for cold storage, which was attributed to unstable power during the storage period, and 4.30% for grains stored in the PP bag. Carbon dioxide concentration in the hermetic bag was maintained at about 11% throughout the storage period indicating low microbial activity. The hermetic bag technology was identified as the best option for quality preservation during storage of maize grain over the other methods, and its adoption by smallholder farmers in Ghana should be considered.

ABSTRACT

The SARS-CoV-2 main protease (Mpro) plays an important role in the viral transcription and replication of the SARS-CoV-2 virus that is causing the Covid-19 pandemic worldwide. Therefore, it represents a very attractive target for drug development for treatment of this disease. It is a cysteine protease because it has in the active site the catalytic dyad composed of cysteine (C145) and histidine (H41). The catalytic site represents the binding site for inhibitors, many of them bind to Mpro with a covalent bond. In this research, structural and physiochemical characteristics of the Mpro binding site are investigated when the ligand 11a is covalently and non-covalently bound. All-atom molecular dynamics (MD) simulations were run for 500 ns at physiological temperature (310 K). It is found that conformations of both the Mpro protein and the ligand are stable during the simulation with covalently bound complex showing stronger stability. When the ligand is covalently bound (its final state), residues that stably interact with the ligand are H41, C145, H163, H164 and E166. The optimal conformation of these residues is stabilized also via the Hbond interactions with the catalytic water present in the Mpro binding site. In the case of the non-covalently bound ligand (state before the covalent bond is formed), the binding site residues retain their conformations similar to the covalent binding site, and they still form Hbonds with the catalytic water, except H41. This residue, instead, adopts a different conformation and looses the Hbond with the catalytic water, leaving more freedom to move to the ligand. We hypothesize that H41 could play a role in guiding the ligand to the optimal position for final covalent bonding. Further analyses are in process to check this hypothesis. These results represent an important basis for studying drug candidates against SARS-CoV-2 by means of computer aided drug design.

Drop in nutrition value during food logistics impacts the health of consumers. Vegetables, fruits, fish, milk lose nutrients during logistics if it is not properly monitored. Real-time tracking and monitoring, large data handling and secure business transactions are key to the effective operation of supply chains. The COVID-19 pandemic has taught us the need for handling unforeseen situations in various sectors. Limitations to logistic operations, inaccessible warehouses, shutdown of consumer outlets for an unexpected duration, have affected the supply chain drastically. This has laid emphasis on the need for technology-based solutions that can monitor, control and make quick decisions, that can reduce losses. With this scenario as a background, a system architecture has been proposed to detect the nutrient value of food by periodically monitoring temperature and humidity in real-time and alerting the cold chain entities in cold chain environments. This architecture is proposed as an integration of Internet of Things (IoT) with cloud-based storage, to provide real-time data collection at the end-user, seamless storage and computation in the cloud and secure transactions at the business layer. An experimental setup of the system architecture has been configured and the implementation has been tested at a preliminary level. The performance of the application is analyzed and the proposed web application is efficient for large scale supply chain applications, provided scaling of hardware resources.

ABSTRACT

Our previous study revealed that tissue culture-adapted porcine epidemic diarrhea virus (PEDV) strains, namely KNU-141112-S DEL2/ORF3 and -S DEL5/ORF3, were attenuated to different extents in vivo, suggesting that their independent deletion (DEL) signatures, including 2-amino acid (aa; residues 56-57) or 5-aa (residues 56-60) DEL in the N-terminal domain (NTD) of the spike (S) protein, may contribute to the reduced virulence of each strain. To investigate whether each DEL in the NTD of the S1 subunit is a determinant for the virulence of PEDV, we generated two mutant viruses, named icS DEL2 and icS DEL5, by introducing the identical double or quintuple aa DEL into S1 using reverse genetics with an infectious cDNA clone of KNU-141112 (icKNU-141112). We then orally inoculated conventional suckling piglets with icKNU-141112, icS DEL2, or icS DEL5 to compare their pathogenicities. The virulence of both DEL mutant viruses was significantly diminished compared to that of icKNU-141112, which causes severe clinical signs and 100 % mortality. Interestingly, the degree of attenuation differed between the two mutant viruses: icS DEL5 caused neither diarrhea nor mortality, whereas icS DEL2 caused mild to moderate diarrhea, higher viral titers in feces and intestinal tissues, and 25 % mortality. Furthermore, the icS DEL5-infected piglets displayed no remarkable macroscopic and microscopic intestinal lesions, while the icS DEL2-infected piglets showed histopathological changes in small intestine tissues, including moderate-to-severe villous atrophy. Our data indicate that the loss of the pentad (56GENQG60) residues in S alone can be sufficient to give rise to an attenuated phenotype of PEDV.

ABSTRACT

The menace of infectious diseases has constantly been a reason of concern for humankind since time immemorial. As evident by the name, infectious diseases can infect a huge population within a short period, leading to an eruption of pandemics and epidemics. The present human era is fortunate enough to have a wide array of readily available drugs that help cure and prevent various diseases. Moreover, the scientific community has always responded to the needs of society through its drug discovery and development programs. The co-existence of multiple diseases calls forth the scientific community to design and develop drugs that could have a broad spectrum of activity. In this perspective, our goal was to investigate the potential of reported MbtA inhibitors (antitubercular molecules) in inhibiting HIV-1 RT and nCovid-19-RdRp and eventually leading to the identification of a multi-targeted ligand (triple co-infection inhibitor). In this study, the primary success was attained by capitalizing on the structure-based virtual screening drug discovery approach. Results were quite promising. Molecular docking results showed that GV17 interacted strongly with the active site residues of both the target proteins (HIV-1 RT and nCOVID-19-RdRp). Moreover, the docking score of GV17 was more than that of the internal ligands of both the target proteins, which indicates a firm binding. Molecular dynamics further validated these results as identical amino acid residues were observed in the protein's docked pose with the ligand. The detailed atomic interactions of ligand GV17 with the protein residues have been discussed. Overall, the protein–ligand complexes remained stable throughout the simulation, and the system's backbone fluctuations were modest. MM-GBSA analysis revealed free binding energy of − 72.30 ± 7.85 kcal/mol and − 65.40 ± 7.25 kcal/mol for 1RT2 and 7BV2, respectively. The more negative binding energy indicates a stronger affinity of GV17 with both the receptors. GV17 also gave satisfactory predictive in silico ADMET results. Overall, this computational study identified GV17 as a potential HIT molecule and findings can open up a new avenue to explore and develop inhibitors against nCOVID-19-HIV-TB triple-infections.

ABSTRACT

The aim of the study is to investigate the food safety perception of consumers during and after the covid 19 pandemic. Surveys were administered to a total of 1000 people from all regions of Turkey via the internet. The survey data were defined as frequency and percentage, and analyzed by nonparametric test methods for dependent and independent groups. As a result of the analysis, it has been determined that the knowledge and awareness levels of consumers about food safety are generally high, and that there are significant differences according to education, age and region. It was observed that the participants did not differ much between their food preferences before and during COVID-19, but they were more careful about health and packaging safety. In other words, the anxiety level of the participants increased during COVID-19. In addition, it was found that with the increasing of education level and age, the awareness and knowledge of the food preferences of the participants also increased. As another factor affecting consumer behavior, the result of the anxiety level measurement that can be evaluated within the scope of perceived risk, it was determined that 76.4% of the participants would prefer more packaged food products during and during the pandemic period. The results of the study support that consumers' preferences in situations of uncertainty are shaped according to their risk perceptions and there is an increase in their anxiety levels.

Objective: The aim of this research is to determine the methods used by consumers from all regions of the country to evaluate the COVID-19 factor SARSCoV-2 virus in terms of food safety and to protect against it. Materials and Methods: The data obtained as a result of the research were evaluated using the mean, probability value (p value), percentage values and squared (X2) importance test with the Minitab program. Results 74.35% of the 1006 people know that SARSCoV-2 Virus is the virus that causes COVID-19.41.25% think that the SARS-CoV-2 virus that causes COVID-19 is transmitted through food.65.90% of consumers think that SARS-CoV-2 virus will be protected by following all general hygiene rules and 53.67% by opting for packaged food that is not sold in the open. Conclusion: Based on the results of the survey, it was thought that the COVID-19 virus could be transmitted through food, but the accuracy of this information could not be definitively proven.

ABSTRACT

Good Practices in Food Manipulation are procedures applied in food services to guarantee the consumer the quality and safety of food following current health legislation. Good practices are essential to reduce the risk of contamination from Foodborne Diseases (FDAs) and, therefore, the training of food handlers must be an ongoing process. Considering the current context resulting from the COVID-19 pandemic, alternatives in the offer model for training these professionals should be proposed so that the process is not interrupted. The "Good Manufacturing Practices in Food Handling" course, offered annually by the IFPR - Campus Colombo since 2015, was remodeled to remotely guide food handlers about good hygiene practices and procedures in the workplace. The training was carried out through a free platform and made available on a Youtube channel. The meetings took place weekly for five weeks, totaling a workload of twenty hours. Each meeting lasted three hours, plus one hour for asynchronous activities. Forty students completed the course and thirty-two answered the satisfaction questionnaire. All responded that they would use the knowledge obtained from the course in their professional routine, indicating that, with training, it is possible to improve to ensure the production of food with more quality, safety and with less risk of contamination for consumers.

ABSTRACT

The European Commission's Green Deal strategic plan aims to achieve EU climate neutrality by 2050. As part of this plan, the Farm-to- Fork (F2F) strategy and the Biodiversity Strategy (BDS) will be accompanied by a new Common Agricultural Policy (CAP post-2020). This paper presents and discusses the results of techno-economic analyses carried out by the European Union's Joint Research Centre (JRC) and the United States Department of Agriculture (USDA). The two analyses are based on fundamentally different economic models, but they converge in stating that the application of F2F and BDS strategies will result in an increase in production costs and consumer prices of agricultural products and a decrease in profitability as well as a reduction in agricultural production, with a consequent loss of domestic market share by European producers to those of other countries. Under these conditions, the lower emissions of pollutants and greenhouse gases will be compensated by an increase in emissions in other areas of the world, to which the agricultural production that Europe will no longer be able to produce will be relocated. In addition, according to the authors, environmental sustainability at the European level will also be called into question if one takes into account that reduced agricultural production will result in a significant reduction in the removal of CO2 from photosynthesis.

Awareness of COVID-19 infection, as a public crisis, makes an emergency condition for survivors. Regarding the importance of early rehabilitation, we should pay particular attention to the potential risk of real-life toxicants in COVID-19 survivors. The adverse effects underlying COVID-19 infection lead to persistent sequelae in survivors. In addition, complete rehabilitation is challenging in seriously-ill patients due to cytokine storm severity, inflammation, oxidative stress, and cell death contributing to multi-organ damage. Different foods, environmental/occupational pollutants, and unhealthy lifestyles are real-life examples of toxicants that can pose redox imbalance and oxidative damage to the biological system. The key concept is that survived patients with persistent tissue damage, low-grade inflammation, oxidative stress, and fibrosis are susceptible to real-life toxic stressors, which have the potential for oxidative stress. Moreover, fibrosis are susceptible to toxic stressors, which can induce harmful effects by promoting oxidative stress and pro-inflammatory components. This paper attempted to elucidate a vital toxicological concept in which the existing sequelae of COVID-19 survivors increase the potential risk of real-life toxicants and to propose a practical strategic approach to reduce toxicant exposure.

An online questionnaire, consisting of 24 questions was applied to determine individuals' food purchasing, food hygiene, and nutritional behaviors during the COVID-19 pandemic. Of 658 re-spondents, 67% were female, 33% were male, 60% were 18-24 years old, and 25% were 25-31 years old. Supermarket shopping (73.9%) was the most preferred way to supply food, while the primary stocked up food was dried legumes (59.1%). The nutritional values and contents of foods were more paid attention to than before the COVID-19 pandemic, and the packaged foods (79.3%) were primarily preferred. The most preferred methods for cleaning fresh fruits and vegetables were washing under running water (59.7%) and soaking in water with vinegar (43.2%). The participants intended to eat healthy foods during the COVID-19 pandemic. However, the daily meal counts increased slightly. Food supplements, mainly vitamin C (73%) and vitamin D (40.5%) were consumed to strengthen the immune system. Additionally, social media (31.9%) and TV programs (20.3%) were very effective after medical doctor recommendations (32%) for orienting the nutritional behaviors of participants.

ABSTRACT

In an attempt to improve access to food distribution systems during the Covid-19 pandemic, the United States Food and Drug Administration (FDA) issued temporary flexibility in food labeling requirements. This requirement affects the Top 8 allergens and could lead to accidental allergen ingestion. The purpose of this study was to utilize a qualitative method to collect and analyze comments to FDA that were available via Allergic Living's website from May 22, 2020, to June 18, 2020, following the release of the food labeling change. In total, 3,033 comments were analyzed using the thematic analysis six-phase framework approach. Various themes were extracted relating to the emotional responses of the new labeling including fear, safety concerns, and trust of certain food product brands among the food allergy community. This research has implications for a broad spectrum of the U.S. food industry including restaurants, grocery stores, specialty food associations, and consumers. Stakeholders and experts in the food allergy community should be consulted when a policy change is occurring, especially during a pandemic affecting access to safe food.
